Smoked Onion Jam

Have you ever tasted something for the first time and  immediately thought to yourself, “How have I lived without this my entire life?” I recently had one of those moments when I tasted this smoked onion jam.  I became aware of the producers (Blackberry Farm) last year at the Atlanta Food and Wine Festival, but it was not until recently that I tried this delicious creation.  Blackberry Farm is a world renowned  ultra luxury  resort located in the  foothills of the Smoky Mountains of Tennesse. One of the unique things about this resort is the fact that it has an outstanding working farm along with artisans(chef, butcher, cheese maker, forger, master gardner, chocolatier) that work to produce foods of the highest quality.You don’t have to have deep pockets(rooms are expensive) to enjoy some of what they produce. Cheese, charcuterie, preserves, and rare heirloom seeds can be purchased from their website. I’ve had the opportunity to sample many of there cheeses and charcuterie and they are outstanding.

 

Let me get back to this onion jam though. Its made with those already naturally sweet Georgia Vidalia onions. They are smoked to release their natural sweetness, while still holding on to that smokiness white balsamic and benne seeds are then added to help round things out. I have been putting this stuff on everything.  Cheese, grilled cheese sandwiches, biscuits, eggs, pizza, grilled veggies and lamb have all been uplifted with this jam. This is a great example of regional artisans using regional products to create something very special.
